You can make the tasty coffee cake as it is simple and you need to add in good quality coffee. Here’s what you need for coffee crumb topping:
- 160 g all-purpose flour
- 80 g light brown sugar
- 1/4 teaspoon salt
- Pinch of cinnamon
- 100 g butter, room temperature
- 3 to 4 teaspoons, coffee granules
- 3/4 teaspoon ground cardamom
Now, you need to mix all of them along with soft butter and rub with your fingers, so that there are no crumbs. Just keep that aside.
What do you need for a mocha ribbon?
- 60 g milk or dark chocolate
- 40 g unsalted butter
- 1 tsp cinnamon
- 1 tbsp brown sugar
- 60 ml strong espresso or Cold Brew concentrate
- 50-60 g biscuits ladyfingers or other roasted walnuts, freeze-dried raspberries, or hazelnuts
This method will give a better flavor and texture. You need to add this in the first half of the batter. Take a bowl and mix all of them with cold brew or espresso, cinnamon, butter, brown sugar, and heat them together. After that let it cool down and you can even mix in the nuts.
How to make coffee cake batter?
- 455 g all-purpose flour
- 57 g neutral oil
- 2 teaspoons vanilla extract
- 170 g butter, melted
- 1 1/2 teaspoons salt
- 170 g sour cream
- 4 large eggs
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 180 g packed light brown sugar
- 113 g Cold brew concentrate or espresso
- 1-2 tablespoon instant coffee granules
Method
Take a bowl and first mix the dry ingredients. Take the egg and beat it together with sugar till the time it is doubled. Then, add in butter and oil, espresso, vanilla extract, cour cream, and instant coffee & mix it all.
Into the wet mixture, you need to add in the dry ingredients and mix them slowly, and then add in the 2 parts. Make sure that you don’t do that in excess.
Take a rectangular springform and first add half of the cake batter and then add in the coffee ribbon over and spread it evenly. Add in the leftover crumbles. You need to bake that for around 175 C and make sure to preheat it. Bake it for 40 minutes.
How to make a glaze?
- 5-8 tbsp powdered sugar
- 100 ml leftover coffee or cold brew
- 1 tablespoon sour cream
Mix all of them and let it boil. Then lower the flame and boil it till the time the syrup gets half. Let it cool down and only drizzle when the cake is cool. You can keep the cake for 3 days and make sure to keep that in a tight lid container and keep that at room temperature.
